The Blind Spot Method: 

The name given to this method is purely from my side. In this method, you only make some blind assumptions about temperature settings. Like most chefs, they argue about measuring temperatures without infrared devices and flour methods. This is where this method finds its importance.

In the case of commercial and home microwaves, where you have digital temperature settings, always preheat to 100+F degrees above the required temperature. Like, if the required temperature is 500F, you can preheat to 600F.

The additional 100F degrees will cool off during the resting period.

However, woodfired ovens don’t have anything digital or analog temperature meters, so what’s the formula for that case?

Well, there is another catch here. To detect whether your oven is ready or not for baking, check the sides, roof, and bottom of your pizza oven. If the cemented sides get gray, this is the indication you can accelerate the baking paddle.

As this method is purely on assumptions and tricks, consistency in baking a perfect pizza can be an issue here.
